Yo, mes soeurs! Are we back on track for this weekend?
Frankly, I'm not so sure about the Foie de Veau -- intrigued, but I expect in this household, a main dish of calf's liver for 6 will have, after everyone has eaten their fill, about 5.5 servings left over. I am thinking of cooking one calf's liver (beef liver, actually) this way in a small side pan, and substituting another meat for the rest of it. Perhaps pork chops (I know, it seems a travesty, but the flavors would probably go together nicely) or maybe pork tenderloin?
But the starter and dessert sounds good! The meal needs a veg and a starch, from my point of view, too. Easy enough.
Any thoughts?

I'm doing the cheese souffle from the next lesson and a dessert. I was thinking the cherry clafouti from the next lesson, but I may weaken and make a cherry cobbler recipe that I know we love and which isn't CB.
But it could be good to do a dessert which I know I won't love, so the orange ice cream is a possibility. There are lovely fresh strawberries in the market now.
Oh, and Vivi. We feed calves liver to the cat, who loves it more than anything. Perhaps you might find you had an eager audience after all, or even 6 or 8 of them.
Yes, we fed some to Floyd tonight. He licked the plate cleaner than when we wash it. And then urped it all back over the Turkish carpet.
I have another pound of liver to feed to them -- lesser amounts in future, however.
